just bought a GReddy exhaust gas temp gauge.

where is the best place to fit the sensor on the exhaust?

Either just before the turbo inlet, This means drilling and taping the cast steel or fit it in the down pipe as its easier to get off.
I have just got a Japspeed down pipe to fit mine into.

thats good i have a extra sensor hole in my HKS down pipe but i thought maybe it had to be fitted somewhere in the exhaust maifold

Best fitting place for accurate monitoring of exhaust gas temperature is the exhaust manifold! And there best to take 5th and 6th cylinder cause they are the hottest ones. But ít´s a pain in the a**e to get the sensor fitted there. If you have an aftermarket exhaust manifold it´s gonna be a little easier, but still s**t. That´s the reason why most people decide to mount it in the downpipe (easier to take off and often already aftermarket and therefore stainless steel). If mounted in downpipe, keep in mind that monitored temperature is colder (!) than temperature of exhaust coming directly out of cylinders. So always add about 150 degrees!
