the black one...the other two are heater wires and are not polarity specific
lamda sensor signal wire
I have a AFR gauge and need to know which wire is the signal wire on the lamda(O2) sensor . There are 2 white wires and a black wire . which wire do I use .

is it wide band or narow ash
If it's narrowband, you'll regret ever buying it... all it'll do is dance around from lean to rich and back all the time.
I threw mine away, and bought a narrowband set, a bit expensive, but they DO work.
